The area of production, processing and packaging of extra virgin olive oil Colline di Romagna PDO includes part of the territory of the provinces of Rimini and Forlì-Cesena, in the Emilia-Romagna region.

Olives must be harvested manually or by mechanical means directly from the plant, avoiding contact with the ground. The harvest period must be from 20 October to 15 December each year. The olives are transported to the mill in rigid and aerated containers. The only treatments allowed are defoliation and washing at room temperature of the olives before milling, which must take place as soon as possible and in any case within two days of harvesting.

There are traces of the presence of olive trees in this area since prehistoric times. The continuous presence of this plant, in Rimini, is attested by the Villanovian Age (X-VIII century BC). Several sources testify to the spread of the olive tree cultivated to a large extent close to Sant'Arcangelo di Romagna; many oil mills also emphasize its importance in the economy.
